EASY MEAL PREP IDEAS

Meal prepping seems like a lot of work and most people think they do not have the time for it but it is actually super easy! I love homemade meals instead of eating take out all of the time. Follow along for my guide to easy meal prepping for breakfast, lunch, and dinner!

B R E A K F A S T

COPYCAT STARBUCKS EGG BITES & HOMEMADE GRANOLA

For breakfast, I like to make a copycat Starbucks Egg Bites. These are really great because you can mix and match whatever you want. I like to do Trader Joe’s Liquid Egg Whites, peppers, and cheese. Another good option is spinach and tomatoes. For my Homemade Granola, I basically find a recipe that I’m really feeling that day or week. The great thing about these is there are so many different ways to make them as well giving you so much variety so you don’t get sick of it. My go to recipe is oats, mini dark chocolate chips, honey, peanut butter, and raisins. I like to use RX Nut Butter such as the Vanilla Almond Butter, it gives me extra protein while also giving off energy. You can make these into little spheres and eat on the go or add on top of yogurt for a parfait.

TOMATO MOZZARELLA WITH BALSAMIC DRESSING & BLT TURKEY WRAPS

For lunch, I can’t live my life without cheese! As much as I try it is just something I refuse to let go. I love a good Caprese salad!! I like to cut up tomatoes and mozzarella cheese and store them in the fridge so that if I need to grab and go, all I need to do is take them out and add some balsamic vinaigrette. Another thing I can prepare for myself on one of my days off is a BLT Turkey Wrap. All you have to do is bake the bacon in the oven and then assemble. I add some kind of spread to my wrap such as sriracha mayo, add the lettuce, sliced tomato, turkey, and bacon. Wrap them up and put them in the fridge and then I can just grab them in the morning for lunch with chips.

PESTO CHICKEN WITH ROASTED BROCCOLI/POTATOES & PASTA WITH SEASONAL VEGGIES

For dinner, I like to prepare two types of meals, an easy oven cooked meal and pasta option. A pasta meal is so easy to just reheat in the microwave when you get home. For the oven meal I usually make chicken with two veggies. I love broccoli and potatoes but you can mix and match whatever are your favorites. You could also do sweet potatoes as a healthy option. After cooking the chicken, broccoli, and potatoes on a sheet pan, I place a little bit of each in containers and save for later! Next, I try to add some veggies into my pasta to feel like I’m getting some nutrients out of it. I will chop up some seasonal squash, grape tomatoes, and zucchini. Cook it in a pan with olive oil and salt/pepper for about 10 minutes. I make my pasta and usually use a jar of already made sauce. Put all of the ingredients together and there you go!
